Jimmy Shu is no stranger to the kitchen. He recalls the early days in Sri Lanka where he had to shell incessant mountains of prawns, making his aching fingers smell like the sea for months. Jimmy remembers waking up at the crack of dawn to be first in line at the markets as he watched his father pick and choose his produce, like a skilled artisan. Jimmy’s humble yet inspiring beginnings fuelled his desire to explore Asia and discover more foods within this region, resulting in the opening of over 13 restaurants across Australia and Malaysia. The Hanuman restaurant first opened 25 years ago in Darwin and is still operating today. The concept is a celebration of his profound love of South East Asian & Indian cooking. The menu is explosive – showcasing bold flavours of the Orient, including 14 hour braised Beef Massaman and pandan infused sticky black rice topped with caramelised custard. The authenticity and quality of Hanuman’s fare lies in the bounty of fresh, home grown Asian produce, whilst still adopting traditional cooking methods like clay ovens fired by charcoal. Monlika Food is an extremely popular stallholder at Malak Marketplace on Saturday evenings during the dry season.

She uses the best certified organic produce – all meals are made using Halal beef, poultry and certified organic and spray-free fresh produce – to create authentic Indonesian sweets and hot food.

Monlika Food will be showcasing traditional Indonesian certified organic food including beef rendang, bakso soup (meatball noodle soup), traditional Indonesian chicken or lamb satay, corn fritters and Monlika’s signature green sweet pancake.

NEEDLE IN A HAYSTACK

Martin and Kelly are passionate about showcasing local and organic Northern Territory produce in a contemporary style.

Seasonality is at the heart of what they do. They will look at what local farms are growing and design a menu around that. They do this for a simple reason, because food tastes better when it is fresh and naturally grown.

At Territory Taste:

  • Roasted jerk pumpkin, corn and coconut salad, wattle seed, whipped avocado
  • Beetroot cured local jewfish, raw beetroot salad, horseradish cream and rye bread
  • Beer and thyme braised beef, roasted garlic and potato puree, watercress, wasabi kale and beef and beer reduction
  • Earl Grey panna cotta, faux brown sugar lumps, honeycomb, raspberries.

Popular with the lunch-crowd in Darwin’s city centre, Chakoro Sushi prepares beautifully fresh, tasty and expertly made sushi temaki  rolls (hand rolls) from favourite sushi flavours such as salmon, chicken, tuna, avocado and of course rice.

Taste the amazing, fresh flavours of: aibiza, kang kong, Brazilian spinach, mushroom leaf,
long leaf coriander, aloe vera, lemon grass, basil ( sweet and Thai), chilies, pumpkin tip, galangal and more. All Things Eatable will be on hand to guide you through new tastes with advice on how to use these amazing, and perhaps little-known edible plants.
