Jimmy Shu is no stranger to the kitchen. He recalls the early days in Sri Lanka where he had to shell incessant mountains of prawns, making his aching fingers smell like the sea for months. Jimmy remembers waking up at the crack of dawn to be first in line at the markets as he watched his father pick and choose his produce, like a skilled artisan. Jimmy’s humble yet inspiring beginnings fuelled his desire to explore Asia and discover more foods within this region, resulting in the opening of over 13 restaurants across Australia and Malaysia. The Hanuman restaurant first opened 25 years ago in Darwin and is still operating today. The concept is a celebration of his profound love of South East Asian & Indian cooking. The menu is explosive – showcasing bold flavours of the Orient, including 14 hour braised Beef Massaman and pandan infused sticky black rice topped with caramelised custard. The authenticity and quality of Hanuman’s fare lies in the bounty of fresh, home grown Asian produce, whilst still adopting traditional cooking methods like clay ovens fired by charcoal.
