The Spice Blending Workshop with Ian 'Herbie' Hemphill

Spice blending is an art as much as a science, and every spice blender will have his/her own approach to making a blend. The ultimate requirements may vary considerably depending upon for whom the blend is being made. A multinational food company wanting a spice blend to use in fast food outlets will be concerned about cost, a flavour profile that does not offend anyone and uses readily available, consistent quality ingredients. An artisan spice blender will be concerned about quality, flavour and appropriateness of use.

As one grows familiar with all the different herbs and spices, it becomes apparent that most of the spices we use have quite distinct and often very different characteristics. Some are strong and could be even described as unpleasant in isolation, others like one of my favourite spices cinnamon, are a delight to experience even on their own. When I make a spice blend I seek to create a different taste which can only be achieved by putting a combination of spices and herbs together, and sometimes a spice blend bears little resemblance to any of the individual spices used.

In this 1 ½ hour workshop, participants will be guided through the principles behind spice blending, will receive a mortar and pestle as part of the registration fee, and make their own bespoke spice blend to take home.

Dumpling Workshop - How to make the best dumplings

Hosted by Danny Yeum of Roast & Noodles 328 fame, the best Hong Kong roasted meats restaurant in Darwin.

The workshop will begin with a brief introduction about the origin and different types of dumplings.

Danny Yeum will then teach participants a few simple ways to make dumplings at home.

Apart from teaching how to make the dumplings, he will also be teaching two different ways to cook dumplings, using the soup and steam-based techniques.

Turning Water into Beer

During the workshop we will discuss our range of beers and cider, how the beer is made and the impact the ingredients have on the flavour, appearance and aroma of the beer.

We will also talk about the best food matches for each beer style, it will be an interactive workshop and participants will be able to get hands on with the ingredients and ask questions.

150ml tastings available in the workshop include:

Otto’s – Red Ale (4.8%)
A malt driven beer that is ruby red in colour with biscuit and light caramel flavours. Medium body.

RDO – Bright ale (4.5%)
Light straw colour, with a low malt profile and light body. Medium bitterness with a floral/citrus aroma. Very sessionable beer.

4:21 – Kolsch (4.8%)
Ours is an unfiltered beer light golden in colour. Light body with a noticeable malt profile finishing with a hint of citrus/fruit. Easy drinking ale.
